Gambas Al Ajillo

Tapas: Gambas Al Ajillo (Spanish side dish)

Serves about 2-4 people

Ingredients: 1LB Shrimp (I used 13-15 count per pound, however, smaller ones are just fine too), 1 cup chopped onions, 1/2 cup chopped garlic ( or more if you like) 1/2 cup olive oil (I used one from Spain since this is a Spain dish), 1 tsp smoked paprika powder or chili powder or crushed pepper, 1 tsp fresh grounded black pepper, 1tsp dried basil (fresh ones are always better), 1/2 tbsp lemon juice, 1tbsp parsley.

 

Chop onion and garlic

 

Put olive oil in the pan

 

Add chopped onions and garlics and start on medium heat

 

Stir occasionally, and try not to burn. If it start to burn, low the heat. Cook about 5 to 10 mins.

 

when onions and garlics turn clear, turn off the heat

 

Put shrimps in single layer in oven safe cookware. ( I used this )

 

Pour cooked onion and garlic over the shrimps including the oil

 

Sprinkle smoked paprika powder, fresh grounded black pepper, basil flacks (fresh chopped ones are always better) and little bit of lemon juice.
Place it in the oven at 400F for about 15 mins or until shrimps are cooked.
And than, broil it for 2-3 mins

 

Garnish it with chopped parsley.

 

Serve it warm with grilled ciabatta

 

-Gambas goes well with either beer and wine.

-I like to dip bread  and eat it!! So savory and yummy!!

-No need to add salt since the shrimps are already salty.

-With the left over oil, you can use it for oil pasta! Just cook angel hair or spaghetti and add left over oil and some chopped basil and cook it on the pan!!
