Chimichurri Sauce

Chimichurri Sauce

(makes about 1 1/2 cup)

Ingredients : Chopped Parsley 1cup, Chopped shallots 1/3 cup, Chopped or dried oregano 1tbsp, Olive oil about 2/3 cup, Lemon juice 1 tbsp, Sea salt 1 tsp

 

 

Chop parsley and shallots finely.

 

Add oregano, lemon juice, salt into a mixing bowl.

 

Lastly add olive oil into the bowl just enough to cover all the ingredients and stir well.

 

I served as garnish to healthy cauliflower steak.

You can make this ahead of time and leave in the refrigerator until serve.

If there’s no time for chop, use mixer to grind everything. It will still have same great taste but creamy texture.

This simple and easy to make sauce goes well with steaks, pan seared chicken, or roasted vegetables.
