Baked crispy chicken tenders

Serves about 4 people

Main ingredient:  12 pieces of chicken tenders (approx. little over 2 lbs)

Marinade ingredients:  1/2 cup milk, 1 tbsp lemon juice, 1tbsp olive oil, 1/2 tsp salt, 1/2 tsp garlic powder, 1/2 tsp black pepper, 1/4 tsp smoked paprika powder

Breading ingredients: 2 cup panko, 1/2 cup Parmesan cheese, 1/2 tsp tumeric, 1/2 tsp black pepper, 2 tbsp olive oil

In a large bowl, put all the marinade ingredients and mix it well. if you have butter milk, you can substitute it for milk and lemon juice

 

Put chicken tenders into the marinade

 

Marinade tenders for at least 20 mins in refrigerator

 

In a bowl, combine bread crumb (panko), parmesan cheese, black pepper, turmeric powder

 

Mix it well

 

Add olive oil

 

Mix it well. It will turn to nice yellow color

 

Take out the tenders and prep the cooking surface. Now is the good time to turn on the oven to 400F

 

Bread the tenders evenly

 

I like to bread it lightly so it doesn’t feel too heavy yet crispy

 

Place them on lined oven safe pan. Leave them little spaces in between so they don’t stick together.
You can use foil, parchment paper, or even silicon lining

 

Bake them in the oven for 12 mins or until the breading starts to turn golden brown.

 

Turn them over and cook for about 5 more mins or until tenders are cook thoroughly

 

I used mini oven because bigger one was occupied by other things, however, the tenders came out perfect! Cool them on a rack or serve them immediately

 

I like to dip in Sriracha mayo since I like spicy, but these tenders go well with any kinds of dipping sauces.
Cooled tenders can be re-heated in the oven and it will be even crispier
